CKN and Tasso Jambalaya

( Tasso is a Cajun smoked ham -- Good ham will work fine )- A good smoked sausage can also be used !-- For CKN and sausage jambalaya )

Seasoning mix :
2 whole Bay leaves
1/8 tsp each Red -White and black pepper
1 1/2 tsp salt
1/4 tsp each -- thyme- oragano- sage
1 tsp Tabasco

2 TBS butter
1/2 lb tasso -smoked sausage or a good ham --Chopped
3/4 lb chopped chicken ( bite size )
1 cup each -- onion -celery- bellpepper
1 TBS minced garlic

1 can diced Tomatos
1/2 cup tomato paste
2 1/2 cups CKN Stock
1 1/2 cups uncooked rice

Cook meat over medium high heat in unsalted butter until brown --Add CKN and cook until browned -- stirring frequently -- stir in seasoning mix and Tabasco -- veggies and garlic --cook until veggies begin to get tender -- 5-8 minutes --stirring and scraping the pan often -- stir in Tomatos and tomato sauce and CKN stock -- Bring to a boil add rice and reduce to a simmer !-- Cover and cook about 15 minutes
