I have 2 plants now that are about 5 in. each. One has like 8 leaves and the other has two that are turning yellow and 2 new ones that are coming in. I wanted to know if I should put soil up to the first set of leaves. Also would it be good to have an oscillating fan bringing in air from outside?

Oh and I have a new one that just sprouted, and is growing real fast. how long should it be kept in the starter pot before transporting it to a large pot?

I don't know how big the containers you have them in now are so I can't offer you much info re: when to transplant.
You can transplant as deep as up to the cotyledons (the first, oval leaves).
