Adjusted pH flush water

Can somebody please explain to me why the water used to flush plants has to be pH adjusted? I understand that nutrients are available to the plants at a certain pH level - but I don't understand why plain water has to be pH adjusted if the plant is only drinking water and not taking in nutrients.

Ive also been told it can shock your plant to have a ph swing over 1 if its all of a sudden.
