ok so say 2 weeks into flowering you turn your light timer on (away from timer mode) and lights stay on 24/7 3 days. Cut em down and just start over???

No, I would not cut them down and start over. Just put your lights back to the right schedule (and keep your fingers crossed). They may have a little funny looking growth, but they should recover. You probably won't have any long term repercussions over this, but make sure it doesn't happen again.

You are not completely out of the woods, you should keep an eye on them. However, it kind of seems that mother nature allows us 1 screw up without punishing us with a hermie. This does mean that you will have to be careful from here on out.
