"Dark & Dry

After cutting the plant or branch, hang it upside down in a cool, dry, and most importantly dark place. Light must be avoided from this point on."

Why is it important to avoid light when hang drying?

This is because light and temperature that is higher than about 80 degrees will cause THC to break down into less desirable chemicals, which will lower the potency of the end product.

I understood it also made the chlorophyl break down.

That is my understanding too. Everything I have read makes that the most important part of curing. Fresh air,no lights. If you don't get the cloriform (I don't think that is spelled right) your bud will taste bad for sure.
