Can anyone tell me when I should officially start counting the age of my seeds e.g. is day one :
a) when the seeds are put in to germinate
b) when the seeds actually germinate
c) when the shoots break soil

I go with C, just because A and B can have different lengths in time.

But I believe that is your choice

i always count from when i start to germinate then i note how long it takes and so on good luck hope to see some growing going on soon peace
