Wait. Give them a good soak to the point of runoff, with added molasses, sweet, or another carbohydrate supplement, and then give them the time they need to ripen.
If your runoff is below less than about 6.6, use water adjusted to about 7.5 until you get a runoff between 6.6 and 7. This will ease any stress caused by sour soil.
Your lower fans are gonna go pale near harvest anyway, that's normal. You just want to be sure that there's no excess fertilizer stored in the soil or plant as you near the finish line.
