How Do You Age Your Plants ??

My plants have been in soil since 6/26 that is 14 days in soil. They took a few days to sprout out of the soil some a lot longer than others. How do most of you all do your plants age?? (In soil or Once they sprout). This is a picture of 4 of mine 14 days in soil or 14 days old?:confused2:

I start the day I see them pop their little heads out of the soil
