If you have a game camera you should be able to catch them copulating , this way you can be sure the mating has taken place.

Just this morning (0500) I interrupted a pair of deer doin' the deed. They were in the neighbor's yard - the doe took off running and the buck stood there looking at me. Then, head lowered, he grunted, stomped once and took off after the girlie deer.
